🌟 Wisdom Bites with Ali Presents: Pork Tenderloin Stir-Fry with Brocolli and Cashew 🌟

Juggling life can be hectic, but dinner doesn’t have to be! This dish is inspired by our hard-working moms in Ontario (like me!) who deserve a delightful treat.

🍖 Ingredients:
➡️ Pork tenderloin (1 pound)
➡️ Soy sauce & rice vinegar (2 tablespoons each)
➡️ Brown sugar (1 tablespoon)
➡️ Cornstarch (1 teaspoon)
➡️ Olive oil (1 tablespoon)
➡️ Fresh ginger, minced (2 tablespoons)
➡️ Garlic cloves, minced (4)
➡️ Crushed red pepper (1/4 teaspoon) 🌶️
➡️ Bright, blanched broccoli florets (1/2 pound) 🥦
➡️ Cashews (1 cup)
➡️ Sesame oil (1 tablespoon)
➡️ Rice (for that cozy base)

🍳 Steps:
1️⃣ Slice pork medallions and then cut into half-inch strips.
2️⃣ Whisk together soy sauce, rice vinegar, brown sugar, and cornstarch for the marinade. Add pork. Chill for 15-30 mins.
3️⃣ Heat olive oil in wok (or blackstone). Add ginger, garlic, and red pepper. Sauté until fragrant.
4️⃣ Add pork. Sauté for 3-4 mins and set aside.
5️⃣ Add blanched broccoli. Stir for 4-5 mins.
6️⃣ Mix pork, broccoli, and cashews. Drizzle with sesame oil.
7️⃣ Serve over warm rice. Dinner is served! 🍚🍴
